Frequently Asked Questions

What's the shelf life? Can I freeze the dough? What if I only use half a package?
All of our COOKIE DOUGH products can be frozen for up to 6 months. When stored in a refrigerator, an unopened package of dough will be fresh unti the date on the back of the package (under the flap). Once a package is opened, you should store the remaining dough in a ziploc bag or Tupperware container. If you do this, you can use the dough for up to another month.

Because our biscuits, scones, and rolls are in pressurized cans, you should NOT freeze them.

Where is the expiration date?
Flip the pkg over and under the flap is a date and a code. If you need to contact us about an issue, we'd love this info . . .

Do you have online coupons?
Not yet . . .

I ate your cookies on Jet Blue, United, or Alaska Air, and I need to find them!
The best way to get hold of our snack cookies: order them online. . .

Did you guys really bake a big cookie?
YES. The BIGGEST, actually. Check it out here.

What are the ideal conditions for baking the perfect cookie?
Preheat the oven. Make sure the oven temp is accurate. Place the sheet on the middle rack of your oven. If you're using them directly from the freezer, let them thaw a bit. Keep an eye on  baking cookies (they sometimes have a mind of their own!). Ovens are all different, so peek in on them every now and then!

Can I eat the cookie dough raw?
NO. Really. NO.

What are transfats?
Transfat is a type of fat that has been synthetically altered (partially hydrogenated) causing it to become a harmful fat, which the body has difficulty breaking down. Some common types of transfats include partially hydrogenated soybean oil and margarine. Frequent consumption of these fats can lead to heart disease.

Do your products contain peanuts, tree-nuts or traces of either?
Our pre-baked snack cookies (snack bags and 7oz cartons) are NOT made in a facility with peanuts or tree nuts.

Our cookie and brownie doughs, scones, biscuits, cinnamon rolls and crescent rolls ARE made in a facility that has peanuts and tree nuts. We observe  industry standard cleaning practices on our lines between varieties. One of our cookie dough products contains peanuts (Peanut, Caramel, Milk Chocolate).

Why Palm Oil, and what's the difference between palm fruit oil and palm kernel oil?
We use Palm Fruit Oil ... NOT Palm Kernel oil. Both oils come from palm trees, but that is where the similarity ends. Palm Kernel oil is extracted from the nut and is generally solvent extracted. Palm Fruit oil is extracted only from the fruit. Compared to other tropical oils, Palm Kernel oil is 83% saturated fat; Coconut oil is 92% saturated fat; Palm Fruit oil in ONLY 51% saturated fat AND contains No Cholesterol. As a comparison, Butter is 54% saturated fat and contains high levels of cholesterol.

What's unbleached / unbromated flour?
Banned in the European Union, bromated flour contains potassium bromate, a suspected carcinogen. Once thought to need "aging" for best results, flour was treated with potassium bromate as a maturing agent. In addition, flour was bleached to produce a brighter, consistent white color. At Immaculate Baking, we realize that neither bleaching nor potassium bromate is necessary for - or desirable in - great baked goods.
