1 cup gluten-free old-fashioned oats
1/4 cup packed brown sugar
2 teaspoons ground cinnamon
3/4 cup butter, melted
1 tablespoon water
6 large apples, peeled, cut into 1-inch chunks (about 8 cups)

Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

In large bowl, stir together cookie mix, oats, brown sugar and 1 teaspoon of the cinnamon. Add melted butter and water; mix until crumbly. Set aside.

Place apples in baking dish. Sprinkle with remaining 1 teaspoon cinnamon. Toss apples gently to distribute cinnamon. Drizzle apples with caramel topping. Sprinkle with cookie mixture.

Bake 45 to 50 minutes or until topping is golden brown and apples are tender. Serve warm or at room temperature.
- Serve with a couple spoonfuls of gluten-free vanilla Greek yogurt, a scoop of ice cream or a dollop of whipping cream.
- Need to save time? Instead of using fresh apples, use two 20-oz cans of gluten-free apple pie filling. Omit the caramel topping and the teaspoon of cinnamon that is tossed with the apples.
